Inniskillin Riesling Icewine is a premium dessert wine made from Riesling grapes in the Niagara Peninsula, Ontario, Canada. The region's cold winters allow the grapes to freeze naturally on the vine, concentrating their sugars and flavors. The winemaking process involves leaving the grapes on the vine until late December or early January when temperatures reach around 10°C (14°F). Hand picked while frozen, the grapes yield a small amount of sweet juice, which undergoes fermentation for about 23 days. After fermentation, the wine ages for several months to develop its complex flavors and aromas. Inniskillin Riesling Icewine can be enjoyed shortly after bottling or aged for over 20 years, enhancing its depth and character, and has 9.5% alcohol by volume (ABV).
